El café colombiano es muy estimado por su suavidad y sabor en el mundo. Dos variedades de la especie coffea Arabica: Colombia y Caturra son cultivados principalmente en Colombia. En esta investigación estudiamos la difusividad térmica, usando la técnica Fotoacústica de celda abierta, de los granos de café verdes de variedad caturra de acuerdo a su grado de humedad y ubicación geográfica en el Departamento de Risaralda. Conocer esta propiedad es importante para el proceso de tostado industrial, ya que permite definir la temperatura de este proceso del café. Además se investigó la absorción de luz por pigmentos en las mismas muestras de café luego de realizarles un proceso de tostado y molido, en la región visible del espectro electromagnético empleando una celda fotoacústica cerrada. Colombian coffee is very esteemed by its mildness and flavor in the world. Two varieties of the Coffea Arabica species: Colombian variety and caturra are cultivated principally in Colombia. In this work we study the thermal diffusivity of the coffee green beans of caturra variety according to moisture degree and geographic origin region in the Risaralda department in Colombia, using open cell photoacoustic technique. The knowledge about these properties can be very important for industrial roasting process, because it can allow a better control of the roasting temperature when the beans are classified. Furthermore was investigated the absorption of light in the visible region of the electromagnetic spectrum using close cell photoacoustic, by pigments in the same coffee samples later of a ground and roasting process.
