This thesis studies of market development, technical, engineering, organizational, legal, environmental and financial compliance that allowed the specific objectives of the Project Management, managing to determine the feasibility of keeping the Colombian market an ancient gastronomic product as is the corn arepa.
Accordingly, the theoretical foundation consisted of studies on innovation, competitiveness and consumer behavior, conducted by the Business Confederation of Madrid, the Ministry of Education and Culture of Colombia, the contributions of Rafael Alejandro Molla Sesga and Decals. The methodology used to develop the study, was based on the implementation of surveys that measured consumer preferences characterized by its location, education level and family composition.
Subsequently, the technical and engineering study was conducted to develop aspects of the process and projection of production, according to an initial installed capacity of 1,500 daily arepas, thereby determining what would be the operating costs and initial investment; with previous projections the organizational, environmental and legal studies, according to staffing requirements, the type of production and type of company to be created were made: Finally the financial study demonstrated the feasibility of the project. Carried out the execution of the study will contribute to the conservation of an ancient product as arepa, besides generating employment, innovation and competitiveness in the food sector in the city of Cali.
